The Barry County University of Missouri Extension, in collaboration with a Missouri Department of Conservation educator, is hosting the "Field to Freezer-Deer Summer Sausage" workshop on October 15, 2024, from 6:00 to 8:30 p.m. at First Christian Church, 905 Old Exeter Road, Cassville, Missouri.
This workshop is designed to help participants learn how to process their own deer, providing an opportunity to save money while enjoying their harvest.
The class will focus on essential topics such as food safety, necessary equipment, and demonstrations on processing ground products and solid meat.
Participants will also learn how to make summer sausage, and each attendee will take home 1 to 1½ pounds of sausage to cook at home.
In addition to meat processing, the workshop offers hands-on training on how to properly score deer antlers using Pope/Young and Boone & Crockett scoring methods.
While participants will practice scoring multiple antlers, certification as an official scorer is not included.
