MU Extension Offers Better Process Control School for Acidified Foods Dec. 19-20

By Blake Jackson

University of Missouri Extension is offering an in-person Better Process Control School for processors of acidified foods Dec. 19-20. The first 25 people to sign up will be enrolled for free.

The two-day training will be held in Eckles Hall on the MU campus in Columbia. The course is primarily for Missouri operators, supervisors and manufacturers who thermally process acidified foods and meet new FDA requirements (21 CFR 114.10 and 21 CFR 108.25).

Topics include microbiology of thermally processed foods, sanitation, closure of double-seamed metal and plastic containers, introduction to thermal processing and mild thermal processing. Participants who successfully complete the training receive a certificate, and their names will be submitted to the FDA.
