In addition to providing beauty to a spring Ozarks landscape, eastern redbud trees can also add flavor to the dinner table.
People who want to learn more about how redbud trees can provide dining, as well as viewing, pleasures should register for the Missouri Department of Conservation's (MDC) virtual program "Wild Edibles: Edible Redbud Blossoms." This free online event, which will be from noon-1 p.m. on March 30, is being put on by the staff at MDC's Twin Pines Conservation Education Center in Winona. At this event, MDC Naturalist Wendy Lott will discuss how those purplish redbud blooms that add beautiful patches of color to this region's early spring landscape can also be used in salads and other dishes.
Though this program is free, registration is required to participate. Use the link above. Registrants must provide an e-mail, so a program link can be sent to them. This program will include a chat-based question-and-answer period where participants can interact with the presenters.
