Perfecting your thanksgiving turkey - expert tips

Thanksgiving is a time for family, friends, and, of course, a delicious turkey dinner. But don't let the thought of cooking a turkey stress you out. With a few simple tips, you can create a mouthwatering feast.

Choosing and Thawing Your Turkey:

Size Matters: Plan for about 1 pound of turkey per person, especially if you want leftovers.

Thawing Techniques:

  • Refrigerator: The safest method. Allow 24 hours for every 5 pounds of turkey.
  • Cold Water Thawing: Submerge the wrapped turkey in cold water, changing the water every 30 minutes.
  • Avoid Counter Thawing: This can lead to bacterial growth.

Preparing and Cooking Your Turkey:

  • Don't Rinse Your Turkey: Rinsing can spread bacteria to your kitchen surfaces.
  • Stuffing: For safer cooking, stuff the turkey just before roasting.
  • Roasting: Place the turkey breast-side up on a rack in a shallow roasting pan. Use a meat thermometer to ensure the internal temperature reaches 165°F.
  • Basting: While it might seem like a traditional practice, basting doesn't significantly improve flavor or moisture.
  • Resting: Let the cooked turkey rest for 20 minutes before carving to allow the juices to redistribute.

Storing Leftovers:

  • Refrigerate Promptly: Refrigerate leftovers within two hours of cooking.
  • Safe Storage: Store leftovers in airtight containers in the refrigerator for up to four days.
  • Freezing: Freeze leftovers in airtight containers or freezer bags for up to two to six months.
  • Reheating: Reheat leftovers to an internal temperature of 165°F.
